Curry Leaf
Murraya Koenigii
Curry leaf , the germ - killer.
Sought- After Tree of the Commons
The curry leaf tree is the most common tree in India, abundantly growing in the deciduous forests and jungles of the country.
It is the most sought -after aromatic in South Indian cuisine, flavouring dal, sambar, rasam, kari, etc.
There is a marked difference between the tender and the mature leaves of this plant.
|
|
Tender leaves have less protein , less fat, less sugar , less starch, less mineral content, less crude fibre as compared to mature ones. However, they contain volatile oil and oleo-resin in abundance. Hence for flavouring purposes, tender leaves are preferred.
The leaves, in general , strengthen the body, increase appetite, eliminate body heat and fever. They impart brightness to the eyes and guarantee blackness of hair.
The juice of the root is taken to relieve pain associated with the kidneys.
